I mean, if we filled their site with the most obviously fake, bad AI slop imaginable to the point the AI ends up becoming useless, that would also work. But it's probably better and definitely easier to just do what you said
They will respect your choice, ignoring it would be a stupid risk when they have a loophole so obvious they are open about it. Even if you opt out, any content about you shared by someone that didn't will be used to train their models.
Here's how to beat this: delete all meta services! No Facebook, Instagram, Threads or WhatsApp. Delete it all.

Theoretically it should but in regard to this usage in AI, it seems to be an ongoing development to adapt GDPR for such cases too I guess?

No. Unfortunately, lemmy is full of falsehoods about the GDPR. The truth is that the GDPR says that there needs to be a legal basis for processing so-called personal data. Consent (=opt-in) is one of 6 possible justifications. Legitimate interest (=opt-out) is another.
